Many times when you see a recipe that boasts “quick and easy”, it can be a bit misleading once you start looking at the ingredients and the preparation time. However, this recipe IS quick and easy. Trust me.

Baked Ziti

Olive Oil
½ onion, chopped
1 garlic clove, minced
1 tsp salt
Pepper to taste
1 bell pepper, chopped fine
1 28 oz. can diced tomatoes
16 oz. ziti pasta (tube shaped pasta) or pasta of your choice
2 cups Mozzarella, grated
½ cup parmesan
1. Sauté onion, bell pepper and salt in olive oil for 4 minutes. Add garlic, cook 2 more minutes.
2. Add tomatoes and cook sauce for 15 minutes over medium heat. Sauce will thicken slightly as it cooks.
3. Combine sauce, pasta, and cheeses in a bowl and pour into a lightly oiled casserole dish. ** Can be prepared to this point the night before **
4. Bake uncovered for 30 minutes.

Serve with a salad and you have a complete delicious meal!
***** Buy a block of cheese and grate it yourself. It’s cheaper plus a block has far fewer ingredients than pre-shredded cheese. And it’s not hard to rub a chunk of cheese against a grater.*****

As long as you’re making the effort anyway, you might as well embrace it and get the very most from it. There’s a reason why you’re making the effort, so your best strategy is to treat that effort as an opportunity rather than as a burden.
