These aren't your typical pancakes.

They are very moist and have a wonderful sweetness to them. I didn't even use syrup with mine. For those of us who can't tolerate grains or want to steer clear of processed flours, these are for you. There is no flour at all in these!

 Apple Pancakes

2 eggs - whisked

1 banana - mashed

1 apple - peeled and cut into very small chunks

1 tsp cinnamon

1/2 tsp nutmeg

1 tsp vanilla

coconut oil to cook pancakes

*Whisk eggs - add the mashed banana. Add the apple and remaining ingredients.

makes 8 small pancakes

The batter will be very thin. Pour the pancake mixture in a spiral when making each pancake to ensure the center cooks well. Let the pancake cook well on each side to make flipping easier.
