SLOW COOK HAM AND BEANS

This wintry weather is sticking around, which means I'm cooking up more of our cold weather favorites.

We love this bean mixture of pinto, lima, garbanzo, split pea, northern, kidney, and black beans. (It comes with a packet of 'flavoring' but I've never used it.)



Ham and Beans

1 pkg dry mixed beans 
1 onion, diced
2 stalks celery, diced small
2 carrots, diced small 
1 jar tomatoes, with juice
1/2 lb ham or ham hock
1-2 garlic cloves, diced
1 tsp dried parsley
pinch of salt and pepper


Beans: Pour dry beans into a large crock pot. Cover completely with water; plus two inches above beans. Let soak overnight.
The next morning, drain and rinse the beans. Cover with water again; plus two inches above beans.

Add all other ingredients. Place lid on crock pot and cook on low all day. The house will smell ridiculously good when you walk in the door after work!

Serve with cornbread and honey.
