DAY 1

I'm excited about this whole thing actually. Anxious to see what's in store for me in the next 100 days.
Our garden is producing some wonderful produce and I’m taking full advantage of that while I can!! The day started with watermelon (out of our garden!) and a glass of milk. Mid morning snack was a banana. Lunch was a treat of fresh cucumbers, cherry tomatoes and onion from the garden as well!! The onion is not from our garden, however we’ve already talked about increasing the size of the garden next year and onions are on the list to add!! Even on day one, I find a change for me!! I usually have cottage cheese with my tomato and cucumber but after looking at the ingredients and seeing it contains 16 ingredients I don’t add it to my plate. Now I LOVE cottage cheese with fresh garden tomatoes so this is already a big change for me!!
Supper is salmon with vegetable salsa which is amazingly good!! We eat this year ‘round but especially in the summer months when we have our fresh vegetables.
We attended a high school football game tonight on a great Nebraska evening!! The smell of popcorn was pretty tempting I have to admit. I didn’t even think about bringing my own “snack”. I stayed strong but I will remember to bring something next time.
We’ll be going out of town tomorrow for a friend’s wedding and I’m a little anxious about what I’ll be eating while I’m gone. While I’m home, I have control over what I’m eating but eating at a restaurant might be a little more challenging. – especially on day 2! We’re staying at the cabin so I have the liberty of planning a meal and either taking or buying the things I’ll need. I want to keep it simple and yet something I’m going to enjoy.
So all in all I feel good about day 1!!
