Day 5

OK~ I have to admit, today was much busier than yesterday. But keep in mind these are things I CHOSE to do, definitely not things I had to do. We ate the last of the granola so I made a fresh batch of it this morning. It’s a quick and simple recipe and makes a nice size batch. I eat it plain and also as actual cereal with milk. I haven’t tried it with yogurt, which I’m sure I will love, but I haven’t had a chance to find a yogurt that isn’t full of preservatives. I know there are some out there, just haven’t taken the time to look. Again, I feel pretty good about it when Jaxon opens the fridge and says, “Yeah, snack!”
Today I had breakfast for lunch - whole wheat banana pancakes. (My husband hates breakfast for lunch so today was the perfect time to do this!) They were pretty darn good! They tasted a lot like banana bread. I also used 100% maple syrup which is much sweeter than I thought it would be so I used a very small amount. I’m excited to say that Jaxon loved them too, which I’m very happy about because I didn’t have a “plan B” if he hadn’t.
Yesterday I saw a fruit stand in town so had to stop and check it out! They had apples half price so of course came home with apples and today I tried my hand at homemade applesauce! And not one bit of sugar in it!! I was pleasantly surprised at how easy it is to make. I plan on freezing some and seeing how good it tastes in midwinter. Dwight came home and tasted it and said, “This is what Grandma Cassie’s tasted like when I was a kid.” That’s the best compliment I could hope for!! I also bought a few Colorado peaches but I’m not sure how to freeze them without having to add a ton of sugar. I’m still looking for a recipe that I’m comfortable with.

You are lucky that Jaxon will eat anything :) I am very glad that he is not a picky eater either...he likes good ole food - tonight he picked the onions right up off of our sandwiches and chowed down on them :) I haven't went with this whole diet of course, but you really do have me looking at the labels and ingredients of everyting! I looked at the cranberries I got Jaxon and they are just cranberries and sugar - I guess sugar isn't so good, but less that five ingredients!!! :) Better than the cream cookies I bought along with them :)
    Keep it up mama! I am impressed as to what all you can eat as well!
