Day 21

  This morning I tried a new recipe for quiche. Well, actually I used the recipe and then went through the fridge and put in anything I could find. I ended up adding spinach, mushrooms, onions, green bell peppers, black olives and tomatoes. It was one of those dishes that when it comes out of the oven, it just looks pretty.   I’ve never had quiche before and I’m not 100% sure I like the texture of it. (I don’t like anything too “mushy”.) It tasted fine, it was the texture that got to me.  I thought about putting some of our homemade salsa on it, but decided I wanted a true taste test so didn’t.  Not sure I’ll make it again unless I add more eggs and less milk next time. I think that would make the texture a little more “solid” for my taste buds. Just for the record, Jaxon wasn’t too impressed with it either and he eats almost anything.
Tonight we are going out with friends to celebrate their anniversary. This will be the first “official” time I’ve eaten at a restaurant since I started this journey. I’m hoping I will be able to choose something easily from the menu. I don’t want to ask a million questions about how everything is prepared, but I won’t jeopardize my plan either. I’ll let you know how it goes!

  1. Add hashbrowns or in your case....shredded potatoes picked from your garden ;) I think that sould help with texture.

  2. Dwight thinks hashbrowns would be good in it too. I'll have to try it again and see if that helps. :)
