Day 71

I finally made granola today and then I almost burnt it. I swear! Some days are just that way. I put it together when Jaxon was napping and then once he woke up we went outside and I just forgot all about it. It didn’t burn, but it’s extra extra crunchy. It will still taste great in the mornings with a glass of cold milk! When I got home for lunch, Dwight had made a big pot of stew and the house smelled amazing. I love our homemade stew! All those fresh vegetables -- Mmmm -- you just can’t go wrong there! There’s plenty left over so I’ll be having it tomorrow as well. As I’ve said before, I love leftovers! One, because they taste great and Two, I don’t have to cook anything. J
I haven’t gotten groceries for a while now, and I have no idea what I’m eating this weekend after the stew is gone. I stopped and grabbed nuts for the granola this morning along with black beans which I can always use later. This is really different for me, not having a “plan”. I must say, it’s much easier when you know what you need to be preparing rather than look at the clock and realize it’s lunch time and you have nothing in mind. Not the ideal situation, but I’ve definitely been living REAL life lately and it’s been a real challenge to keep with this journey. I’m thankful that I keep a few ‘staple’ items around so I can put something together in a hurry if I have to. It may not be fancy, but it will serve the purpose.

  1. That is the problem isnt it...living in REAL life situations and still having the time to plan for your meals....I have a feeling that the time to plan meals for my family is very distant....lots to juggle!!!
