Pumpkin Cookies with Penuche Frosting
These just sound ‘fancy’ to me. Penuche Frosting! J They are super simple but taste amazing. The frosting is what makes them so yummy!
1 cup butter
½ cup brown sugar
½ cup sugar
2 cups flour
1 tsp soda
1 tsp baking powder
Pinch of salt
1 tsp cinnamon
1 can pumpkin
1 egg
1 tsp vanilla
* FROSTING:
3 Tbsp butter
½ cup brown sugar
¼ cup milk
1 ½ - 2 cups powdered sugar
Cream butter and sugars. Add flour, soda, baking powder, salt, cinnamon, pumpkin, egg and vanilla. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake at 350 for 10-12 minutes or until edges are light brown. Cool completely. Frost.
