We love tomatoes. At our house tomatoes are in their own food group. J Mix pasta in the equation and I could eat tomatoes every night! Mediterranean pasta is so easy to make and it requires two pieces of cookware – a pot to boil pasta and a skillet for the sauce and it takes less than 20 minutes to make.
Mediterranean Pasta
6-8 oz penne pasta
2 Tbsp olive oil
1 can (14 oz) diced tomatoes, drained
1 clove garlic, minced
½ jar (6 oz) artichoke hearts, chopped
¼ cup kalamata olives
1 Tbsp capers
½ tsp EACH: dried rosemary, oregano, basil
Salt and pepper to taste
4 oz feta cheese, crumbled
Cook pasta according to directions.  Meanwhile, combine remaining ingredients (except feta) in a large skillet and simmer over medium heat for 10-15 minutes.   Drain pasta and pour into skillet. Sprinkle with feta. Enjoy!

It's difficult to think anything but pleasant thoughts while eating a homegrown tomato.
