Super Bowl Weekend!

I think I’ve watched more NFL this year than the last five years combined. I’ve loved watching the Denver Broncos on their come from behind wins! I’m always a sucker for the underdog so I kept the faith as they’d claw back in the second half and pull off some crazy hail mary pass to win. J
 We’ve also watched the New England Patriots this year; mostly because the Patriots have a homegrown Nebraska boy, Danny Woodhead, whose doing very well for them. We don’t know Danny personally but it doesn’t matter. He’s from Nebraska and we support our Nebraska boys! J His parents live in our town and from what I’ve heard they are down to earth people and are very humble when they talk about their son’s sudden fame and talent. I’m sure his entire family is tremendously proud and happy for him. This Super Bowl weekend will be quite an experience for them.
When I walked in the house this afternoon, my hubby was sitting in the kitchen going through the recipe box. I chuckled and asked him what he was doing. “What do you want to make for the Super Bowl game?” was his reply. I can’t tell you how much I love the fact that he likes to cook and experiment with new recipes. J So we sorted through old and new ideas and we narrowed it down to a few choices. In the next ten minutes we came up with ideas for the weekend meals as well as the football game!  We love our chips and salsa so we’ll be making some black bean salsa for sure. Another of our favorites is Tomato Salad on grilled bruschetta. It --is-- amazing!
This salsa recipe is so flexible. You can add various things to this dish to spice it up or tone it down to your family’s tastes. Add bell peppers, jalapeno, cumin and even crisp bacon if you want.
Black Bean Salsa                                                                      
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 (17-ounce) package frozen whole kernel corn, thawed (or canned)
  • 2 large tomatoes,diced
  • 1 large avocado, peeled and diced
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1/8 to 1/4 cup chopped fresh cilantro leaves
  • 2 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
Mix all ingredients thoroughly in a large bowl.  Taste and add salt, pepper or more lime juice as necessary. Serve with tortilla chips as an appetizer, or with grilled chicken breast as a meal.

Wouldn't it be nice if whenever we messed up our life we could simply press 'Ctrl Alt Delete' and start all over?
