Day 11

We had a great Labor Day weekend with all the kids here! If the amount of food we ate is any indication, I think our kids loved what we cooked! I think they may have been a little skeptical of what we were going to eat with “no preservatives” but it worked out great. Of course, we all talked about my “challenge” and actually everyone thinks it’s a great idea. The girls aren’t sure if they could do it for themselves though. They still think it’s too time consuming. I disagree on that point. It’s not about taking too much time for me, it’s more about planning and making it a priority. Regardless, everyone is a little more conscious of what they are eating and that’s always a very good thing!!


One night we made stir-fry with steak (homegrown meat), shrimp, cabbage, broccoli, carrots, mushrooms, onions, garlic, zucchini, and green peppers with brown rice. Not instant rice but the real thing. Yes, it took 30 minutes to cook, but tasted wonderful. Another meal we had individual pizzas made on homemade wheat crusts! That was fun. Everyone choose their own fresh ingredients and created their own custom pizza. It was the perfect time to try out the new crust recipe and everyone loved it!! We had extra dough so I made up a few crusts and put them in the freezer for a later date. I’m anxious to see how those turn out. Breakfast one morning was omletes (farm fresh eggs) and garden fresh veggies with whole wheat toast and juice. The other mornings we ate cantaloupe and watermelon from our garden along with pineapple, strawberries, grapes, kiwi, and our homemade granola while sitting on the patio. Perfect way to start the day! YUUUUUMMMY!!!

We picked up some fresh chickens and sweet corn at the farmer’s market for the kids to take home with them and after adding watermelon, cantaloupe, cucumbers, tomatoes, and jalapenos from our garden, they had a car load when they left!!
