Here is the recipe for the lastest pasta dish I tried. I think you're going to enjoy it!
Leek and Lemon Fettuccine
2 Tbsp olive oil
3 garlic cloves finely chopped
1 Tbsp fresh or 1 tsp dried oregano
3 large leeks - white part only, finely sliced
Salt and pepper to taste
9 oz fettuccine or speghetti - I used whole wheat pasta
Finely grated rind of 1 lemon
1 Tbsp capers, drained
3/4 cup grated Parmesan cheese
1 cup roughly chopped parsely
1. Bring large pot of water to boil for pasta
2. Heat olive oil over medium heat in large skillet- add garlic, oregano, and leeks; saute until leeks are soft and transparent. Add salt and pepper
3. Cook pasta according to directions; drain, reserving 1/2 cup cooking water. Add pasta to skillet. Add lemon rind, capers, cheese and parsley. Stir well to combine. Add a small amount of reserved pasta water if pasta seems dry.
Serves 4
This can easily be used as your main dish or as a side dish to any meal. Hope you enjoy it!
