I'd like to share a recipe with you to try out during the Meat Challenge. Hope your own challenge is going well and you are truly CHALLENGING yourself to eat less meat this week!! This is a super easy recipe, hope you enjoy it too.
Skillet Ravioli and Vegetables
4 TBSP olive oil 2- 9oz pkgs refrigerated ravioli
2 cups cauliflower 1 tsp Italian seasoning
1 ½ cups chopped peppers (red, yellow, green) ½ cup shredded Parmesan cheese
1 ½ cups sliced mushrooms ¼ tsp salt
2 cups chicken broth ¼ tsp pepper
3 cloves garlic- minced ¼ tsp red pepper flakes
1. Heat 2 TBSP olive oil in skillet. Add cauliflower, peppers, mushrooms and garlic. Sauté 2 minutes. Reduce heat to medium, cover and cook, stirring occasionally for 5 minutes or until light brown. Remove vegetables and set aside. Add ¼ cup broth to the pan. Scrape pan to loosen browned bits; pour over vegetables.
2. Add remaining 2 TBSPS oil to the skillet on high heat. Add ravioli and Italian seasoning. Cook, stirring until ravioli browns, about 2 minutes. Add remaining
1 ¾ cups broth. Cover. Reduce heat to medium and cook until ravioli is tender and plump, about 3 minutes. Add cheese, salt, pepper, pepper flakes and reserved vegetables. Cook 1 minute longer.
