Mediterranean Hummus Wrap

As you know by now, I do not like to shop for groceries. I do of course but I don’t like it. It’s not the actual shopping; it’s the crazy people that seem to be shopping the exact time I am. I lack patience when it comes to rude people. Luck would have it that my hubby doesn’t mind grocery shopping at all, in fact for some strange reason he actually enjoys it which makes me very happy! We’ll sit down together and make out a list and off he goes to town. J I can almost guarantee he’ll come back with a few more things than we had on the list but they’re always things we can use. Apples, bananas and oranges were on the list but I’m glad he decided to get a few extra things. This is what we had for breakfast this morning. J I’d say he did a fine job shopping!
Our lunch was equally as wonderful with a Mediterranean hummus wrap. I didn’t have the ‘wrap’ part. Have you seen how many ingredients are in a tortilla from the store? A TON! I need to try to make my own because I LoVe tortillas. I could eat them every day! When hubby asked me why I wasn’t having a tortilla I asked him if he’d looked at the ingredient list. He said, “Holy cow! There’s like 4 million ingredients.” J Ok, so maybe he exaggerated a bit, but there ARE a lot of ingredients.
 This recipe is out of Pampered Chef cookbook a friend of mine gave me. It has some great recipes in it! In the cookbook it is made into a pizza, which we’ve made before, but we like the combination in a wrap too.
Mediterranean Hummus Wrap
Topping:
14 oz jar marinated artichoke hearts, drained
2 medium plum tomatoes, diced
¼ med red onion, diced
½ med cucumber, diced
½ cup pitted kalamata olives, coarsely chopped
1 container hummus (I make my own- super simple)
Feta cheese (optional)
Tortilla
1. Combine artichoke hearts, tomatoes, red onion, cucumber, and olives in bowl.
2. Spread a layer of hummus evenly over tortilla
3. Place artichoke mixture on tortilla. Add feta if using. Roll up.

 Hummus
1 can garbanzo beans, drained
Olive oil
Salt
Put the garbanzo beans in a food processor. Add enough olive oil until the beans become a ‘smooth’ texture. Add salt to taste. That’s it! Super simple!

  1. Hi Renae. The wrap sounds delicious. But I'm with you, storebought tortillas are not good! I'll be posting my homemade tortilla recipe soon, so be on the lookout. And how wonderful that you have a grocery-shopping husband - so do I! Don't know about you, but I'd probably starve if I had to do the shopping!
