Minestrone Soup

This is the perfect soup for a Super Bowl game! It’s on the agenda for this afternoon’s festivities!  You'd think I was having a big party or something, but no-- just hubby and me. :)

2 Tbsp olive oil
1 med onion, diced
2 med carrots, diced
1 celery stalk, diced
1 med zucchini, diced
1 large clove garlic, minced
1 potato, diced
3 cups sliced cabbage
1 can cannelllini beans, rinsed and drained
1 15 oz jar tomatoes, undrained
3 cups chicken broth
3 cups water
1/2 tsp dried rosemary
1/2 tsp salt
1/2 tsp pepper
Parmesan cheese (optional)
1. Heat oil in stockpot over medium heat. Add onion; cook until softened, about 5-6 minutes
2. Add carrots and celery;cook 3 minutes, stirring occasionally. Add remaining ingredients except cheese.
3. Cover and simmer for an hour. Serve with parmesan cheese if desired.
**We likes to add small pasta to this soup as well **

Enjoy the Super Bowl game!! Cheer Loud!

  1. Your minestrone soup sounds delicious! I love how minestrone is packed with so many healthy vegetables. Thanks for sharing this with Sunday Night Soup Night, look forward to seeing you again soon!

  2. It's one of my husband's favorites!

  3. Sounds wonderful! Glad to find someone else who puts cabbage in their soup. Soup and homemade bread--my favorite winter meal!
