Minestrone Soup

This is the perfect soup for a Super Bowl game! It’s on the agenda for this afternoon’s festivities!  You'd think I was having a big party or something, but no-- just hubby and me. :)

Minestrone

2 Tbsp olive oil
1 med onion, diced
2 med carrots, diced
1 celery stalk, diced
1 med zucchini, diced
1 large clove garlic, minced
1 potato, diced
3 cups sliced cabbage
1 can cannelllini beans, rinsed and drained
1 15 oz jar tomatoes, undrained
3 cups chicken broth
3 cups water
1/2 tsp dried rosemary
1/2 tsp salt
1/2 tsp pepper
Parmesan cheese (optional)
1. Heat oil in stockpot over medium heat. Add onion; cook until softened, about 5-6 minutes
2. Add carrots and celery;cook 3 minutes, stirring occasionally. Add remaining ingredients except cheese.
3. Cover and simmer for an hour. Serve with parmesan cheese if desired.
**We likes to add small pasta to this soup as well **

  3. Sounds wonderful! Glad to find someone else who puts cabbage in their soup. Soup and homemade bread--my favorite winter meal!
